  • Vinification and aging
  • Estate grown grapes, harvested by hand at the optimum moment of maturity. After a careful selection in the vineyard and at the entrance of the winery, each variety of each plot is vinified separately in stainless steel tanks, following the same process: maceration and fermentation at low temperature. After the second fermentation, the wine is aged for at least 12 months in Allier oak barrels.
